Easy Slow-Cooker Lemon Chicken

This Slow-Cooker Lemon Chicken is a breeze to make, bursting with zesty lemon flavor and loads of garlic! The best part? No need for sides—the potatoes and veggies cook right alongside the bone-in chicken thighs in the crockpot. Perfect for a complete, hands-off meal.

Ingredients

  • 1 red onion
  • 6-8 bone-in, skin-on chicken thighs
  • 1-1.5 lbs baby potatoes
  • 1 lemon (zest and juice)
  • 2 Tbsp olive oil
  • 2 Tbsp honey
  • 4 cloves garlic, finely chopped
  • 1/2 Tbsp fresh thyme leaves
  • Sea salt and pepper to taste
  • Bunch of thin green asparagus

Instructions

  1. Slice the red onion and arrange it in a single layer at the bottom of the slow cooker.
  2. Place chicken thighs on top of the onion layer.
  3. Wash and halve the baby potatoes, then add them to the slow cooker.
  4. In a small bowl, combine the zest and juice of 1 lemon, olive oil, honey, thyme, salt, pepper, and garlic. Pour the mixture over the chicken and potatoes.
  5. Secure the lid and cook on high for 3-4 hours or low for 6-8 hours (based on your schedule).
  6. About 15-20 minutes before cooking time is up, set the slow cooker to high and place the asparagus on top. Cook until tender.
  7. (Optional) For crispy skin, remove the chicken thighs 5 minutes before serving, place them on a baking sheet, and broil for 3-5 minutes until golden.
