Ingredients
- 2 lb ground beef
- 2 packages kielbasa sausage, sliced into ½-inch pieces
- 2 garlic cloves, minced
- 1 onion, chopped
- 2 (14.5 oz) cans peeled and diced tomatoes, drained
- 4 medium baking potatoes, peeled and diced
- 2 (15 oz) cans pinto beans, with liquid
- 1 (15.2 oz) can whole kernel corn, drained
- 2 (14.5 oz) cans diced tomatoes with green chile peppers, with liquid
- 1 (10 oz) package frozen mixed vegetables
- 4 cups water
- 2 teaspoons ground cumin
- 2 teaspoons chili powder
- Salt and pepper to taste
Instructions
- In a Dutch oven over medium heat, sauté the chopped onion until softened.
- Add the ground beef and cook until it’s no longer pink, breaking it apart as it cooks.
- Stir in the sliced kielbasa sausage and cook for a few more minutes.
- Pour in the drained diced tomatoes, pinto beans (with liquid), drained corn, diced potatoes, diced tomatoes with green chiles, and frozen mixed vegetables.
- Mix everything until well combined, then add the cumin, chili powder, salt, and pepper.
- Pour in the water, bring the mixture to a boil, then reduce the heat and let it simmer for one hour, stirring occasionally.
