Ingredients:

  • ½ cup (1 stick) unsalted butter (softened)
  • ½ cup (1 stick) unsalted butter (melted)
  • ½ cup creamy peanut butter
  • ¼ cup granulated sugar
  • ¼ cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ⅓ cup unsweetened cocoa powder
  • ½ cup all-purpose flour (plus extra for cookie dough)
  • ¼ teaspoon salt
  • ¼ teaspoon baking powder
  • ¼ cup mini chocolate chips (optional)
  • 1 cup granulated sugar

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper for easy removal later.
  2. Make the Brownie Batter: In a medium saucepan, melt ½ cup of unsalted butter over low heat. Once melted, remove from heat and stir in 1 cup of granulated sugar, 2 large eggs, and 1 teaspoon of vanilla extract until well combined.
  3. Combine Dry Ingredients: Add ⅓ cup of unsweetened cocoa powder, ½ cup of all-purpose flour, ¼ teaspoon of salt, and ¼ teaspoon of baking powder to the mixture. Stir until smooth.
  4. Pour into Pan: Pour the brownie batter into the prepared baking pan, spreading it evenly.
  5. Prepare the Peanut Butter Cookie Dough: In a medium bowl, cream together the softened ½ cup of butter, ¼ cup of granulated sugar, and ¼ cup of packed brown sugar until light and fluffy.
  6. Add Peanut Butter: Mix in ½ cup of creamy peanut butter and ½ teaspoon of vanilla extract until well combined.
