Bright, tangy, and irresistibly flavorful, Lemon Curd is a versatile treat that can be enjoyed in countless ways! The best part? It’s surprisingly easy to make at home.

Ingredients:

  • 1 cup + 2 tbsp granulated sugar
  • 1 tbsp cornstarch
  • ⅛ tsp salt
  • 1 cup fresh lemon juice (about 5 lemons)
  • 3 large eggs
  • 2 tbsp unsalted butter
  • 1 tsp grated lemon zest

Instructions:

  1. In a medium saucepan, whisk together the sugar, cornstarch, and salt.
  2. Add the lemon juice and eggs, stirring to combine. Cook over medium heat, whisking constantly until it reaches a boil.
  3. Lower the heat and simmer for 1 minute, continuing to stir until the mixture thickens.
  4. Remove from heat and stir in the butter and lemon zest until the butter melts.
  5. Transfer the lemon curd to a bowl and allow it to cool.
  6. Cover and refrigerate for at least 6 hours or overnight, letting the curd thicken as it chills.

Enjoy it on toast, scones, or as a filling for your favorite desserts!
