This One Pot Chicken Orzo recipe delivers all the comfort of a creamy, cheesy pasta without the hassle of multiple pots. Tender chunks of seasoned chicken, al dente orzo, crisp asparagus, and a rich, cheesy sauce all simmer together in one pan for a wholesome, flavor-packed meal that’s easy to make and even easier to clean up.

If you’re craving something cozy, healthy-ish, and satisfying—but don’t want a sink full of dishes—this is the one. It’s perfect for weeknights, lazy Sundays, or anytime you want a crowd-pleasing meal with minimal effort.

Why You’ll Love This Recipe

  • One-pot convenience: Minimal cleanup with maximum flavor
  • Balanced & nourishing: Protein-packed chicken, fiber-rich spinach, and vibrant asparagus
  • Creamy without being heavy: Made with a touch of half and half, not a full cream base
  • Seasonal versatility: Light enough for spring/summer, cozy enough for winter
  • Ready in 45 minutes: From prep to plate, it’s a complete meal in under an hour

Ingredients

  • 1½ lbs boneless, skinless chicken breasts or tenders, cut into 1” pieces
  • 1 tsp garlic powder
  • ¼ tsp salt
  • ½ tsp black pepper
  • ½ tsp red pepper flakes
  • 2 tbsp olive oil, divided
  • ½ cup diced yellow onion (about ½ medium onion)
  • 2 cups chopped fresh asparagus (1-inch pieces)
  • 1 tbsp minced garlic (about 3 cloves)
  • 8 oz dry orzo pasta
  • 2½ cups low-sodium chicken broth
  • 2 sprigs fresh thyme (or ¼ tsp dried thyme)
  • ⅓ cup half and half (or milk as a lighter option)
  • ⅓ cup freshly grated parmesan
  • 2 cups fresh spinach
  • Chopped fresh parsley and extra parmesan for garnish

Instructions

Step 1: Season and Sear the Chicken

In a small bowl, toss the chicken pieces with garlic powder, salt, pepper, and red pepper flakes.
In a large, deep skillet or high-sided pan over medium-high heat, heat 1 tbsp olive oil. Add chicken and cook for 10–12 minutes, turning occasionally, until browned on all sides. Transfer to a bowl and set aside.

Step 2: Sauté Asparagus

In the same pan (no need to clean), add the remaining 1 tbsp olive oil. Toss in the asparagus and sauté for 2 minutes until crisp-tender. Remove and set aside with the chicken.

Step 3: Build the Base

Add diced onion to the pan. Cook for 3 minutes until soft and fragrant. Stir in minced garlic and the orzo. Sauté for another 2–3 minutes, letting the orzo toast slightly.

Step 4: Simmer Orzo

Pour in the chicken broth, scraping up any browned bits from the bottom. Bring to a simmer. Cover and cook for 7 minutes, stirring halfway through, until most of the liquid is absorbed.

Step 5: Stir in the Good Stuff

Return the chicken and asparagus to the pan. Add in spinach, thyme, half and half, and parmesan. Stir everything together and cook for 1–2 more minutes until the spinach wilts and the sauce is silky.

Step 6: Serve

Top with chopped parsley and extra grated parmesan. Serve hot and enjoy every creamy, cheesy, hearty bite.

Tips for Success

  • Toast the orzo: This adds a nutty depth of flavor
  • Preheat broth: Warm broth cuts cook time and helps keep the texture just right
  • Use fresh herbs: Fresh thyme brightens the dish, but dried works in a pinch
  • Don’t skip the spinach: It melts into the dish and boosts nutrition
  • Garnish with lemon zest for a fresh finish

Storage & Reheating

  • Refrigerator: Store in an airtight container for up to 3 days
  • Reheat: Add a splash of broth or milk and warm gently on the stove or microwave

FAQs

Can I use chicken thighs instead of breasts?
Yes! Boneless, skinless thighs work great and stay juicy.

Is this recipe freezer-friendly?
It’s best fresh, but you can freeze it in portions. Reheat gently to avoid mushy pasta.

What can I substitute for asparagus?
Try zucchini, peas, or even broccoli florets.

Can I make this vegetarian?
Swap the chicken for mushrooms or chickpeas and use vegetable broth.

Final Thoughts

This One Pot Chicken Orzo is everything a weeknight dinner should be—quick, hearty, and full of comforting flavor. With tender chicken, creamy orzo, vibrant greens, and a cheesy finish, it checks every box for a satisfying family meal.
Whether you’re meal-prepping for the week or just need something simple and nourishing, this is the recipe you’ll come back to again and again.
