If you’re looking for a comforting, family-friendly meal that’s easy to make yet full of flavor, look no further than Beef Lombardi Casserole. This casserole is a delicious fusion of pasta, meat sauce, and three kinds of cheese—with hints of south‑of‑the‑border flair thanks to tomatoes and green chiles.

Whether you’re feeding a crowd or prepping meals ahead of time, this recipe delivers. Here’s everything you need to know to make it shine.

Why You’ll Love This Recipe

  • Satisfying & comforting: A one‑dish meal that feels indulgent but is easy to put together.
  • Cheesy goodness: Layers of cheddar, mozzarella, and parmesan create a melt that everyone loves.
  • Flavor-forward: Tomatoes with green chiles bring a subtle kick, while garlic and onion powders add savory depth.
  • Flexible & forgiving: You can swap proteins, adjust the simmer time, or use different pasta—this casserole adapts.
  • Make-ahead friendly: Prepare parts in advance—assemble and bake when you’re ready.

Ingredients

  • 1 lb lean ground beef (or ground turkey/chicken)
  • 1 (14.5 oz) can diced tomatoes
  • 1 (10 oz) can diced tomatoes with green chiles (e.g., Rotel)
  • 1 (6 oz) can tomato paste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 (12 oz) package egg noodles
  • 1 cup sour cream (or plain Greek yogurt)
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup grated parmesan cheese

Instructions

  1. Preheat your oven to 350°F. Grease a 9×13 baking dish and set aside.
  2. In a skillet over medium-high heat, cook the ground beef until browned and crumbly. Drain excess fat.
  3. Add diced tomatoes, tomatoes with green chiles, tomato paste, garlic powder, onion powder, salt, and pepper. Simmer 15–20 minutes, stirring occasionally.
  4. Meanwhile, cook the egg noodles according to package instructions until al dente. Drain and toss with sour cream until fully coated.
  5. Spread the creamy noodles evenly in the baking dish. Pour the beef mixture over the noodles.
  6. Sprinkle the shredded cheeses (cheddar, mozzarella, parmesan) evenly over the top.
  7. Bake 20–25 minutes until hot, bubbly, and the cheese is melted and lightly browned.
  8. Let stand 5 minutes before serving. Enjoy!

Notes

  • For extra creamy noodles, stir in a splash of reserved pasta water when mixing with sour cream.
  • Let the beef mixture simmer longer (30+ minutes) for even deeper flavor.
  • Cover with foil if the cheese begins to brown too quickly before the center is hot and bubbly.
