How to make kaju katli

 

Here, the complete recipe of kaju katli preparation is classified into three simple categories first one is making smooth cashew powder for kaju barfi recipe,

second one is preparing sugar syrup for kaju barfi recipe and the last one is making kaju katli recipe.

so, let’s make it now.

 

Cashew powder for kaju barfi

 

1. At first, for making smooth cashew powder for kaju barfi recipe pour 250-gram split cashew in a blender.

2. Now, blend these cashews or kajus in intervals.

Note : As continuous blending cashew mixtures will release oil and mixtures become lumpy.

 

3. Then, sieved coarse cashew powder and blend them again.

4. Next do these steps a few times until you get slightly grainy cashew powder for Kaju katli recipe.

Making sugar syrup for kaju katli

 

1. At first, prepare sugar syrup for kaju barfi recipe and pour 200-gram sugar into a non-stick pan.

2. Also, pour 100 ml of water into this pan.

3. Now, gently stir the mixture and completely dissolve the sugar in medium flame.

4. Make the sugar syrup boil sometime.

Making kaju katli recipe

 

1. Now making mouth-melting Kaju barfi recipe make the flame low and pour cashew powder in 3 to 4 batches in sugar syrup.

2. While adding cashew powder continuously stir the kaju barfi mixture on the low flame which helps to avoid making any lumps.

3. Next, add the second batch of cashew powder.

Note: Don’t add all the cashew powder at a time, because in this way it creates lums in the cashew mixture. I added cashew powder in 3 batches.

 

4. Now continuously stir this kaju katli mixture on low flame for at least 25 to 30 min until it gets slightly thick.

5. When it achieves this stage, for enhancing flavour add 1 tbsp rose water.

6. Also, add 2 tbsp ghee.

7. Now, continuously stir these kaju barfi mixtures until it leave from their side.

Note : To check whether your kaju katli is ready or not, first grease your finger then take a small portion of the mixture, cool it down then rotate it in between your fingers if it forms a circular shape without any stickiness then your mixture is ready, otherwise you need further cooking.

 

8. Then turn off the gas and immediately pour the Kaju barfi mixture on butter paper or parchment paper for cooling.

9. When Kaju katli mixture cools a little bit, knead it for 2 to 3 min which makes crack free smooth dough.

Note : Don’t completely cool this mixture because it will become hard and you will not be able to knead the dough.

 

10. Now place butter paper on the top of the dough and make a circular or elliptical shape with a rolling pin or belan of minimum ¼ inch thickness.

11. Next, just like haldirams Kaju katli , I add Chandi ka vark or edible silver leaves to this dough.

12. Without wasting any time cut this Kaju barfi dough into barfi shapes and gently separate this from each other.

Ingredients For Kaju Katli

  • Cashew nut or kaju 200 grams
  • Sugar 180 grams
  • Water 80 ml
  • Cardamom powder ½ tsp
  • Rose water 1 tbsp
  • Ghee 2 tbsp
  • Chandi ka vark or silver leaves.

Instructions

  • At first, pour 250-gram cashew into a mixing jar.
  • Now, to avoid releasing oil from cashews without continuous blending, blend them in intervals.
  • After that, sieve the coarse cashew and reblend the mixture.
  • You will get a little grainy cashew mixture, set aside for later use.
  • Now to prepare sugar syrup for kaju katli sweet pour sugar and water in a non-stick pan.
  • Then, dissolve the sugar completely in a medium flame.
  • After 2 to 3 min when sugar syrup starts rolling boil or one string consistency.
  • Mix, cashew smooth powder in 3 to 4 batches.
  • After, adding each batch, continuously stir the cashew mixtures in low flame, which helps to prevent forming any lumps.
  • When kaju katli mixtures get thickens add a tablespoon rose water, cardamom powder, and desi ghee.
  • Now, mix everything and stir continuously in low flame until kaju barfi mixture starts leaving the side of the pan.
  • When this stage is achieved immediately transfer the Kaju barfi mixture in parchment paper or butter paper for cool.
  • After 4 to 5 min when mixtures cool a little bit, knead it for 2 to 3 min for soft crack free dough.
  • Now, cover this Kaju katli dough with another parchment paper and roll a circular or oval shape of at least ¼ inch thickness.
  • Next, just like haldirams, Kaju katli sweet add Chandi ka vark or edible silver leaves on the dough.
  • Finally, gently cut in barfi shape and our most delicious Kaju katli recipe is ready.

  1. If you are going to use Chandi ka vark or silver leaves add it before cutting these kaju katli sweets in barfi shapes.
  2. While grinding cashews don’t over grind cashews which ultimately makes oil, that mixture not suitable for kaju katli.
