How to make chicken masala


The complete chicken masala preparation is classified into two simple categories,

So, let’s make it.


Marination for chicken masala recipe


1. At first, add 500 gm of bone-in chicken to a medium-size bowl.



2. After that, add 1 tbsp ginger garlic paste.



3. Next, add 1 tsp Kashmiri red chili powder.



4. Also, add 1/8 tsp turmeric powder.



5. Sprinkle,1/4 tsp salt, and 1 tsp garam masala powder.



6. Now, add 2 tsp saunf or fennel seed 



7. Then add 1 tbsp mustard oil.



8. Also, add 1 tsp vinegar or lemon juice.



9. Mix everything such that every spice is evenly coated with chicken pieces. 



10. Finally, set aside marinated chicken in the refrigerator for up to 1-2 hours or for tender and juicy chicken.



11. While marination is going on chopped 3 medium size tomatoes, deseed them and make a smooth tomato puree in a blender.



Making spicy chicken masala gravy


1. Now, for chicken masala gravy heat 4 to 5 tbsp oil in a kadhai or pan.



2. Then spread it evenly.



3. Next, add a few whole spices including 2 dried red chilies,4 cloves,4 green cardamoms, and one small bay leaf.




4. Now, saute them in medium flame for 1 min.




5. After that, add 3 medium size chopped or sliced onions.



6. saute them in medium flame for 3 to 4 min until onions become translucent.



7. Furthermore, add 1 tbsp ginger garlic paste.



8. Saute for another 1 to 2 min until the raw smell of ginger garlic completely goes off.



9. Also, add 2 to 3 chopped green chili and saute the onions until the onions become slightly golden brown.



10. Now, pour the tomato puree which we made earlier in Kadai. 



11. Now mix 1 tsp salt.



12. Also, add 1/8 tsp turmeric powder and 1 tsp Kashmiri red chili powder.



13. Mix it with fried onion, sprinkle a little water and cook on a medium flame for up to 3-4 min until this spices mixture gets thickened.



14. Next, add marinated chickens in Kadai. 



15. Now, mix everything with chicken masalas and cook for 8 to 10 min on medium to low flame.



16. For, preparing chicken masala curry add 2 cups of water to a pan and mix everything.



17. Also, add 2 tsp garam masala powder and mix all chicken pieces in this gravy




18. Now, cover the pan with a lid and cook chicken masala gravy on medium to low flame for up to 10 min to 12 min.



19. Finally, our simple and most delicious chicken masala recipe is completed, now garnish with 2 tablespoons of freshly chopped coriander leaves.

Marinating Ingredients For Chicken Masala

  • 400 gm chicken [bone-in] 
  • 1 tbsp ginger-garlic paste
  • 1/2 tsp salt [adjust as per need] 
  • 1/8 tsp turmeric powder
  • 1 tsp kashmiri red chili powder
  • 2 tsp garam masala powder
  • 2 tsp saunf or fennel seed
  • 1 tsp lemon juice or vinegar
  • 1 tbsp mustard oil

Other Chicken Masala Ingredients

  • 5 to 6 tbsp oil 
  • 1 small bay leaf or tej patta
  • 4 green cardamon or elaichi 
  • 4 cloves or laung
  • 2 inch cinnamon or dalchini
  • 2 to 3 dried red chili
  • 3 medium size finely chopped or sliced onions
  • 1 tbsp ginger garlic paste
  • 2 to 3 chopped green chilli
  • 3 fresh medium size tomato puree
  • 2 tsp red chili powder
  • 2 tsp garam masala powder
  • ½ tsp turmeric or haldi powder
  • salt to taste
  • 2 cup water [adjust as per gravy need] 
  • 2 tbsp finely chopped fresh coriander leaves


    How to make chicken masala gravy?

    1. For marinating chicken masala in a mixing bowl add chicken pieces.
    2. Then add some Indian spices including Kashmiri red chili powder, turmeric powder,garam masala powder, salt, and a tsp of saunf.
    3. Also add a tsp of vinegar or lemon juice, and mustard oil. mix them well, and set them aside for at least 1 hr in the refrigerator for simple marination.
    4. Now, in a blender add deseeded 3 medium size tomatoes and make a smooth tomato puree for later use.
    5. Next, for preparing chicken masala curry heat 5 to 6 tbsp oil in a Kadai in medium flame.
    6. Then, add bay leaf, cinnamon, green cardamom, cloves, dried red chili and saute in medium flame for up to 1 min.
    7. After that, add chopped onions and cook on medium flame until it turns slightly translucent.
    8. Also, mix chopped green chili and the ginger-garlic paste and saute in medium flame until the raw smell goes away.
    9. Next, add tomato puree, Kashmiri red chili powder, turmeric powder, salt, and saute in medium flame until the raw smell of all the spices completely goes away.
    10. Finally, add marinated chicken pieces to this Kadai.
    11. Now, to get spicy chicken masala gravy add a little water and saute all of this mixture for up to 8-10 min on low flame.
    12. Furthermore, add 2 cups of water,garam masala powder, mix everything then cover and cook chicken gravy on medium to low flame for up to 10 min.
    13. After 10-12 min, your chickens become tender and juicy, if you want dry chicken masala then further cook until all the moisture completely evaporates and spices completely stick with chicken pieces.
    14. In the end, our chicken masala recipe is complete now garnish with freshly chopped coriander leaves and serves hot with Indian roti, naan.
