Here the complete preparation of rice kheer is classified into two simple categories,
first one is Preparation for rice kheer recipe,

Preparation for rice kheer recipe
ย
1. At first, for making rice kheer recipe wash the rice thoroughly in running water.
ย
2. Then soak the rice in water for at least 25 to 30 min.
ย
Note: While rice is soaking now chopped the dry fruits including cashew nuts, almonds, pistachios, and raisins.
ย
Cooking chawal ki kheer
ย
1. Now for slowly cooking chawal ki kheer first pour milk into a heavy bottom non-stick Kadai.
ย
2. Then, bring the milk to boil on a medium to high flame.
ย
3. While milk is boiling stir continuously which helps to prevent the stickiness of fat at the bottom of the pan.
ย
4. Now mix soaked basmati rice in this hot milk.
ย
5. Then cook the basmati rice on medium to low flame for at least 15 to 20 min
ย
6. Stir continuously until rice becomes 80% cooked.
ย
7. At this stage, milk becomes half of its quantity.

8. Now, add 6 to 8 tbsp sugar.

Note : You can also make rice kheer recipe with milkmaid just replace sugar with milkmaid and follow the rest of the recipe as it is.

9. After mixing sugar or milk maid chawal ki kheer will become runny, so gently stir at least 5 to 6 min on low flame until kheer becomes thick.

10. Also, add 4 to 5 green cardamom powder and mix it with this rice kheer.

11. After that add 6 to 7 saffron strands and 1 tbsp rose water

12. Also add some dried fruits including chopped almonds, cashew nuts, pistachios, and raisins.

13. Now, mix everything and stir on low flame for another 5 to 6 min.

Note : Turn off the gas at set aside this kheer for cooling down. At this stage, rice kheer becomes a little runny, when kheer completely cools down it will reach its desired consistency.

- ย 1 litre full fat milk or whole milk
- ย 50 to 60 gram basmati rice
- ย 6 to 8 tbsp sugar
- ย 4 to 5 green cardamon powder [elaichi powder]
- ย 6 to 7 saffron or kesar
- ย 1 tbsp rose water [optional]
- ย 1 tbsp chopped almond [badam]
- ย 1 tbsp chopped cashew nut [kaju]
- ย 1 tbsp chopped golden raisins [kishmish]
Instructions
how to make rice kheer
- At first for making chawal ki kheer wash the rice thoroughly in the running water then soak the rice in enough water up to 30 min.
- Now in a heavy bottom pan or a deep Kadai pour milk and bring it to boil in a medium to high flame.
- When the milk starts boiling stir continuously which helps to prevent the stickiness of fat at the bottom of the pan.
- Next, add drained rice and cook in medium to low flame at least 15 to 20 min until rice becomes 80% cook.
- Add sugar and gently mix with this kheer and stir at least 5 to 6 min in low flame until kheer becomes thick.
- Also, add cardamom powder and mix it with this kheer.
- After that add pinch of saffron, rose water, some dried fruits including chopped almonds, chopped cashew nut, and raisins in this kheer.
- Mix everything and stir in low flame for another 5 to 6 min.
- Turn off the gas at set aside kheer for cool down.
- At this stage, rice kheer becomes a little runny, when kheer completely cools down it will reach its desire consistency.
- Finally, garnish this rice kheer with freshly chopped dry fruits and raisins and serve as a hot or chilled.

Rice Kheer Recipe Note
- To make rice kheer with jaggery add it after 3 to 4 min when kheer is completed.
- To avoid burning of milk use a non-stick heavy bottom wok or Kadai and frequently stir rice and milk mixture in low flame.
- To make rice kheer without sugar add sugar-free sweeteners when the kheer is ready.
