Here, the complete recipe for chicken chettinad preparation is classified into three simple categories first one is marination for chicken chettinad recipe,

so, let’s make it now.

 

Marination for chicken chettinad recipe

 

1. At first marination for chicken chettinad recipe in a bowl add 500 gm bone-in chicken.,

2. Now add 1 tbsp ginger garlic paste.

3. Then add 1/8 tsp turmeric powder and  1 tsp Kashmiri red chili powder.

4. Sprinkle 1 tsp salt.

6. After that add 3 tbsp hung curd.

7. Furthermore, mix 2 to 3 tbsp chopped curry leaves.

8. Pour 1 tbsp oil.

9. Now mix everything with these chicken pieces and coat evenly.

10. Finally set aside this mixture in the refrigerator for at least 1 to 2 hours for perfect marination.

Making chicken chettinad masala

 

1. Now, for making chicken chettinad masala, in a non-stick pan add 1 tsp cumin seed,1 tsp fennel seed,1 tbsp coriander seed,2 to 3 dried red chilli,3 to 4 green cardamoms,3 to 4 cloves and 1-inch cinnamon.

2. Now dry roast in low flame for approx 1 min when it gives a beautiful raw smell.

3. Then add 1 tbsp poppy seed and quickly mix with the rest spices on low flame.

4. We have to roast till poppy seed turns slightly brown, don’t go beyond this stage as your poppy seeds will burn.

5. Finally, add 4 to 5 tbsp grated coconut and sauté everything for another 1 to 2 min on low flame.

6. After that cool down this Chettinad masala and pour it into the mixture grinder.

7. Don’t forget to add 3 to 4 tbsp of water with it and make chettinad masala paste.

8. Also make tomato puree by grinding 3 medium size tomatoes with adding a little water.

How to make chicken chettinad gravy

 

1. Now to make chicken chettinad gravy, first heat 4 to 5 tbsp oil in a pan and spread it evenly on medium flame.

2. Next, add 1 small bay leaf and 3 to 4 cloves.

3. Now, add 3 medium size chopped onions.

4. Saute in medium flame for up to 4 to 5 min until the onion becomes translucent.

5. Now add 2 to 3 chopped green chili.

6. Further fry onions until it becomes slightly golden brown.

7. Now, add marinated chicken pieces in Kadai.

8. Cook chicken pieces for at least 4 to 5 min on medium flame.

9. Next, add tomato puree which we made earlier.

10. Add 1 tsp red chili powder and 1/8 tsp turmeric powder,1 tsp salt check the taste of salt later after making chettinad curry.

11. Add a little amount of water and cook everything for another 4 to 5 min on medium flame until the chicken chettinad gravy thickens.

12. Finally, add aromatic chettinad masala paste which we made earlier.

13. Now mix everything for another 3 to 4 min in medium flame.

14. After that, pour a sufficient amount of water depending upon your chicken chettinad gravy requirements, to boil these chicken pieces.

15. Now add 8 to 10 fresh curry leaves.

Marinating Ingredients For Chicken Chettinad

  • 500 gms of chicken [bone-in]
  • 1 tbsp ginger garlic paste
  • 1/8 tsp turmeric powder
  • 1 tsp kashmiri red chili powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper powder
  • 3 tbsp yogurt
  • 2 tbsp freshly chopped curry leaves
  • 1 tbsp oil

  • 3 dried red chili
  • 1 tsp cumin seed
  • 1 tbsp coriander seed
  • 1 tsp fennel seed
  • 3 green cardamom
  • 4 clove
  • 1 inch cinnamon
  • 1 tbsp popy seed
  • 100 gram grated coconut

Ingredients For Chicken Chettinad Gravy

  • 4 to 5 tbsp oil
  • 1 small bay leaf
  • 2 large onions [chopped]
  • 2 to 3 green chili [chopped]
  • 3 medium size tomato puree
  • 1 tsp kashmiri red chili powder
  • 1/8 tsp turmeric powder
  • 1 tsp salt[adjust as per need]
  • water to boil
  • 3 tbsp chopped curry leaves

Instructions

  • At first, for marination in a large mixing bowl add fresh chicken pieces.
  • Now add one tablespoon of ginger-garlic paste.
  • Also add some Indian spices including Kashmiri red chili powder, turmeric, salt, and black pepper powder.
  • Then add a few tablespoons of curd or yogurt.
  • Next mix a tablespoon of oil and a few freshly chopped curry leaves.
  • Mix everything and set aside for marination for at least 1 to 2 hours in the refrigerator.
  • Next for making chicken chettinad masala heat a non-stick pan on low flame.
  • Now add some whole spices including dry red chili, cumin seed, coriander seed, fennel seed, green cardamom, clove, and cinnamon.
  • Then dry roast them on low flame for at least 1 min until it gives you a beautiful aroma.
  • After that add a few tablespoons of poppy seed and dry roast for another 1 min on low flame.
  • When poppy seeds change their colour to light red then add 100 grams of grated coconut.
  • Mix everything for another 1 min and your kitchen is filled with a beautiful aroma.
  • Next, cool this Chettinad masala then pour in a blender to make a paste.
  • Besides, wash and deseeded tomatoes and makes puree by adding a little water.
  • Now for making chicken chettinad gravy heat oil in a kadhai on medium to high flame.
  • Then add one small bay leaf,3 cloves add chopped onions.
  • Saute them for some time until onions become translucent and add chopped green chili.
  • Furthermore, saute the onions on medium flame until onions become slightly golden brown.
  • Now add marinated chickens and saute for 5 to 6 min in medium to high flame.
  • Then, add tomato puree, salt, turmeric, Kashmiri red chili powder, and a little water, and mix everything for another 5 to 6 min.
  • After that add chicken chettinad masala and mix it for some time on medium flame.
  • Now, pour some water, sprinkle some fresh curry leaves and cover the pan to simmer this chicken Chettinad curry for 12 to 15 min.
  • Finally, the chicken chettinad gravy recipe is complete, serve this with roti, naan, paratha even plain rice whatever you like.
