Use high smoke points oils to avoid garlic from burning
Before sauteing garlic you must check the temperature of oil in the pan, it should not very hot or cold for cooking.
If possible saute garlic in very high smoke points oils, such as avocado oil, canola oil, or grapeseed oil because these oils can withstand higher temperatures which helps to prevent the garlic from burning.
If your cooking oils become too hot, then turn off the gas immediately, let it cool down for sometime then switch it on again before putting in the garlic.

Stay cautious while sauteing chopping garlic
While sauteing chopped garlic you have to be more cautious because smaller garlic pieces may burn instantly in hot oil and alter the taste of the dish.
